Avocados have great flavour and texture, but how do you know what to pick? It should be dark and slightly firm when pressed (soft means it’s over-ripe). The flesh should be a green that transforms into a buttery yellow around the stone.
Method
You’ll need to take the stone out from the avocado. Get a sharp knife and cut into the fruit from top-to-bottom. Then carefully roll the avocado around the knife so you’ve a line all the way round the fruit. Then take the knife away and twist the two parts. One half will retain the stone.
Take the half with the stone and use your knife to
very carefully strike the stone. The knife should
have attached into the stone, and you can now twist it free from the avocado.
With a spoon, scoop out the nice green flesh, then
throw away the skin.
Get a fork or potato masher and go to work creating a smooth consistency with no real visible lumps.
After your baby has tried avocado by itself, add some finely chopped mint when mashing. You could even treat yourself to a separate helping while feeding your baby – but remember to share!
